Our Favorite All-Aldi Meal: Taco Salad

  We have this once a week at least.  Oftentimes after church on Sunday since it makes alot and is quick to put together.  All of the items needed to make this can be purchased at Aldi and averages $1.00/person in our family of eleven. 

2 lbs. ground turkey

2 heads of lettuce

1 lrg. jar salsa (we use medium)

4 cups shredded cheese (cheddar, cojack, taco blend, etc…)

2 bags tortilla chips

1 lrg. can pinto beans

taco seasonings such as chili powder, garlic powder, ground cumin, etc…

 

Brown ground turkey then add desired taco seasonings.  Allow this to cool slightly.  Chop both heads of lettuce into bite size pieces.  Drain pinto beans, (sometimes we use two cans of beans,  or various other beans such as chili beans, kidney beans and black beans.)  crush both bags of chips.  Combine all of the above in a large salad bowl.  (We have a reeeaaally big one,  as you can imagine!)  Pour in entire jar of salsa  (Sometimes we use two,  but one will get us by.)  and mix well.    We never have leftovers!

  1. We do a variation of Taco Salad…Instead of chips we serve over rice! healthy and cheap. WE use half and half brown and white rice. We also like sour cream on top…oh, and we usually use refried beans as well, instead of whole beans.
